This is a topic I not only get asked about from my clients and readers, but is also something I think of when I’m on the go and need to pack a lunch that’s going to keep my full, energized, and focused for the rest of the day. This post comes in perfect timing as well, as many of you are getting prepared for the fall season and school starting up. Knowing how to build a healthy lunchbox is just as important for adults, college students, but especially important for the little ones! Today I’m sharing a simple “recipe” to make your own lunchbox healthy + an amazing giveaway from MightyNest!

Building a healthy lunch applies to all of us, regardless of age, gender, and diet preference. I’m going to share a template that each and everyone of you can use for yourselves, for your loves, or for your kids just by adding ingredients that fit your needs. For example in my lunch box above I have some of my favorites, quinoa, chickpeas with tomatoes, an apple, almonds, zucchini, Nourishing Nut & Seed Bread, and Lemon Lime Guacamole. A fantastic balance of carbohydrates, fiber, protein, and healthy fats.

Build a Healthy Lunchbox = 1 protein + 1-2 carbohydrates + 1 healthy fat + 1 vegetable + water/herbal tea/3-4oz. diluted 100% juice with water *adjust serving sizes based on your needs/childs needs, use this as a reference for portions.

Examples:

  • Proteins: beans, tempeh, grilled chicken, eggs, wild caught fish, etc.
  • Carbohydrates: sweet potatoes, quinoa, wild rice, whole grain pasta, plantains, fruits, corn, peas, sprouted breads, etc.
  • Healthy fats: avocados, nuts, seeds, hemp seeds, olive oil, homemade salad dressings, etc.
