Summer Corn Succotash

Summer Corn Succotash, corn, avocado, side Summer Corn Succotash, not only incredibly delicious, but kind of fun to say too. This succotash is loaded with fiber, plant-based protein, minerals, B vitamins, antioxidants, phytonutrients, vitamin C, healthy fats, and simply tastes awesome. For the past couple of weeks I’ve been making this almost every Sunday as part of my batch cooking day to use throughout the week as a side dish, to top on salads at lunch time, or even as a quick snack with baked tortilla chips or gluten free crackers– it’s that good I can enjoy it all day long.

This succotash celebrates one of my favorite vegetables of summer, the sweet corn that’s in season, which is the best this time of year here in Nashville. It’s a delicious combination of sweet and savory flavors from spices like cumin, pepper, garlic, red bell peppers, and a pinch of bright sumac. The starchy chickpeas and black beans give this side dish a bit more heartiness and body while the creamy avocado and chives are the perfect toppings to finish.

Apricot Quinoa Summer Salad

Apricot Quinoa Summer Salad main Normally when I think of summer salads images of dark leafy greens, crisp romaine, and crunchy cool vegetables come to mind; this salad is a slight departure of my “normal” summer salad. Apricot Quinoa Summer Salad is a gluten-free grain based salad dense with vegetables and fruits of the summer season, specifically sweet apricots and cool cucumbers. Bursts of citrus, fresh herbs, and earthiness from nutty almonds create a great balance of flavors that turns this side dish into a complete entrée if wanted.

Apricots are incredibly sweet, so to balance the flavors I add citrus from oranges, a tang from raw apple cider vinegar, and earthy saffron. Saffron has become one of my favorite “new” spices in the past year or so using it in a lot of my cooked dishes, but have recently started to experiment with it in salads. Saffron is a beautiful red, small threaded spice which turns whatever you’re cooking using saffron a deep golden yellow, it’s a gorgeous tint of color. The presentation of this recipe is beautiful with flecks of fresh green parsley, orange apricots, brown almonds, green cucumbers, on the background of white or red quinoa.

Pumpkin Spice Granola

Pumpkin Spice Granola | nutritionstripped.comWell friends, I hope you all had a beautiful Thanksgiving! Actually, I still have a couple left this weekend- hey, the more the merrier right? Today I wanted to share possibly the last pumpkin recipe I’m sharing this season (sad I know) as a farewell to November, Pumpkin Spice Granola. This granola is loaded with some of my favorite nuts, seeds, pumpkin spice, and pumpkin puree; it’s the runner-up favorite to my beloved Maple Banana Nut Granola.

This granola is slightly sweet (not as sweet as the Maple Granola Nut) and has a delicious and amazing flavor of pumpkin and pumpkin spice. I’ve been enjoying this granola lately with a little homemade Almond Milk with sliced bananas or blended bananas with almond milk, which creates a super thick and sweet milk.
